Ndole Fish
Ndolé is the national dish of Cameroon — a complex, slow-simmered stew made from bitter ndolé leaves, ground crayfish, fish, shrimp and an aromatic blend of garlic, leeks and African spices. MayaMoyo prepares ndolé the traditional Cameroonian way, blanching the leaves to remove bitterness before slow-cooking them with smoked fish and rich groundnut paste until the stew reaches a deep, velvety finish. A must-order for Cameroonian diaspora events. Half-pan serves 10 to 15 guests.
